Berks food safety inspections found heavy mold buildup on 1 sandwich shop’s ice machine – Reading Eagle

Berks County is divided into three jurisdictions: Examining, Muhlenberg Township and the rest of the county. Looking through and Muhlenberg Township have their own food stuff safety inspectors and the relaxation of the county is inspected by Pennsylvania Office of Agriculture inspectors.

Functioning containers in dish sink area, employed for storing *substances, cleaners* taken from bulk supplies, were being not marked with the popular identify of the chemical. Laundry soap containers becoming filled with dish cleaning soap are not labeled. Corrected. Entrance doors/sides and handles of get to-in fridge gear all through kitchen area area have a food items residue/grime buildup and have to be cleaned. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the small temperature sanitizing dishwasher and the glasswasher at the bar was <10 ppm, and not 50-100 ppm as required. Call for service was made and technician is to arrive this afternoon. Facility will be manually sanitizing dishes until the units are shown to be operating properly. Observed fly paper strips installed above the prep table in the downstairs bakery area. The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. A food employee was observed touching baked bread, a ready -to-eat food, with bare hands. Corrected. No sign or poster posted at the handwash sinks in multiple areas to remind food employees to wash their hands. Refrigerated ready-to-eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. The food facility does not have a handwash sink located in the downstairs bakery area. The handwash sink in the cook line area is being used as a food preparation sink as evidenced by observed employee washing produce in the sink. Out of compliance.

Kentucky Fried Chicken #052, 2245 Lancaster Pike, Shillington, Dec. 28: six violations. The food facility does not maintain Food Employee Certification records as required. Class is scheduled. The floor / wall juncture in mop sink and some floor coving areas is not coved and closed to 1/32 inch. Coving tiles have gaps at wall area. Observed food stored in walk in cooler area, where it is subject to splash from dripping water from ceiling of walk-in cooler. Dry breading mixtures used for dipping of raw animal foods is not sifted every 4 hours to remove excess moisture and doughballs which may render the dry mixture a TCS food per FDA guidance document issued 6/28/04. Corrected. Screws and washers of ice shield flap inside ice machine are rusted and must be replaced with a food-grade material. Caulking at side wall of warewashing sink is dirty/moldy and needs to be resealed.

LJ’s Fitness, 102 N. Third St., Womelsdorf, Dec. 28: no violations.

Doc & Bubba’s, 4312 New Holland Road, Mohnton, Dec. 27: one violation. Food facility has an employee that has taken food safety training program however, the food safety program was not an ANSI/CFP accredited Certified Food Manager program.

Giavanna’s Pizzeria, 1500 New Holland Road E3, Reading, Dec. 27: six violations. Observed hood system in the grill area, with dripping grease and soil accumulation. Windowsill area at sinks is painted wood that is now peeling and chipped and must be refinished. Flooring in the kitchen and pizza prep area is made of linoleum that is cracked/torn and is not a smooth, easily cleanable surface and must be repaired. Front door located in the dining area of the food facility has a large center and top gap and does not protect against the entry of insects, rodents, and other animals. Heating vent and walk in fan box/ceiling area of the food facility is extremely dirty, dusty, and in need of cleaning. Observed trays of pizza dough stored in bain marie area, where it is subject to water splash from heavy buildup of condensate water in bottom of refrigerator unit. Trays to be moved. Ceiling tiles missing in the dough mix area, and need replaced.

Logan’s Roadhouse, 65 Wilderness Trail, Hamburg, Dec. 27: two violations. Food facility hot water heater is not producing enough hot water to supply sinks at the time of this inspection. The handwash sink located in the facility does not have water at a temperature of at least 100°F. Out of compliance.

Doc & Bubba’s, 4312 New Holland Road, Mohnton, Dec. 20: 15 violations. Observed wet wiping cloths in kitchen area, not being stored in sanitizer solution. Corrected. The hot water used for sanitizing in the mechanical warewashing machine did not reach 180°F (or 165°F for stationary rack). 3-bay sink to be used for sanitizing. Observed clean food equipment and/or utensils in dish rack/ice machine area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Food facility has an employee that has taken food safety training program however, the food safety program was not an ANSI/CFP accredited Certified Food Manager program. Observed salmon thawed in reduced oxygen packaging which is a prohibited method. Corrected. The wash solution temperature in the stationary rack, dual temperature mechanical warewashing equipment was 94°F, rather than not less then 150°F as required. The water temperature of the wash compartment of the manual warewashing equipment was 94°F, rather than not less than 110°F, as required. Kitchen ice machine has a dirt residue build up around top of interior bin. Some ice bins and bar equipment drain lines are extended into floor drains and need an appropriate air gap. Paper towel dispenser empty at the handwash sink in the pizza oven area. Observed ice used as a coolant in the patio bar area, being used as food, box of canned beverages stored in ice machine. Corrected. Observed food stored on table in the kitchen/pizza area right next to handsink, where it is subject to splash from hand washing. Shield must be put on sink or table removed. The quaternary ammonia concentration in the sanitizing solution of the bar 3-bay warewash sink was 100 ppm, rather than 200-400 ppm as stated on the manufacturers use directions. The handwash sink located in the kitchen/bar area does not have water at a temperature of at least 100°F. Also handwash sink at warewashing area has a broken hot water faucet. Flooring gaps around bar drain catch basins have spray foam around and are not durable, smooth, non-porous, non-absorbent and easy to clean.

Mario’s Pizza, 159 S. Reading Ave., Boyertown, Dec. 20: no violations.

Subway #10484, 2677 Shillington Road, Sinking Spring, Dec. 20: five violations. Heavy mold buildup on ice deflector shield and drop chute area of kitchen ice machine. This is a repeat violation. Old food debris/dirt under walk in cooler racks around edges of flooring. The floor / wall juncture in mop sink area is not coved and closed to 1/32 inch. Large opening at wall at sink must be repaired. Missing coving tile at rear doorway next to mop sink and wall covering is loose at rear door with a wood exposed frame. Observed wet wiping cloths in counter area, not being stored in sanitizer solution. Sanitizer was low and changed out. Wall around mop sink area has a mold/soil build up and bottom of sink has dirt/soil accumulation.

1787 Brewing Company, 43 S. Fourth St., Hamburg, Dec. 14: no violations.

Boston Market #3605, 140 Wilderness Trail, Hamburg, Dec. 14: 10 violations. Walk-in cooler is not holding temperature properly. Freezer door is being propped open to help keep temperature. Various food, a refrigerated, ready to eat time temperature control for safety food in the reach in and walk in cooler area, was date-marked by the facility, but was beyond the use or sell by date and requires discarding. Corrected. Ice machine in kitchen has mold around drop chute area on interior top of bin. The handwash sink located in the rear kitchen area does not have water at a temperature of at least 100°F. Water turned off due to leak. Food facility inspection indicates evidence of drain fly insect activity in warewashing sink area, but facility does not have a pest control program. Exterminator to be requested for follow up. Floor drain basins under warewashing, prep sink and soda fountain area have a sludge and or mold buildup and must be cleaned out. Observed clean food equipment and/or utensils in pan rack area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Warewashing sink has a hose attachment that is hanging below the flood rim of the sink and not an appropriate air gap. Excessive ponding of dirty water under warewashing sinks due to drain line overflowing onto floor area. Several coving tiles broke or missing also large broken tile area around floor drain at fryer causing a ponding of water and missing floor tile in front of fryer area must be replaced. Out of compliance.

Schaylor Brewing Company, 2390 Lancaster Ave., Reading, Dec. 14: four violations. Soda lines and/or non-integral cold plate device installed in ice bin and in contact with ice used for consumer beverages. Observed clean food equipment and/or utensils in ice machine area, stored wet in a manner that does not allow for draining and/or air drying. Ice buckets have old water in bottom. Plastic utensils used for cooking are deformed/chipped and misshapen from heat and are not durable under normal use in the food facility. Corrected by discarding. No sign or poster posted at the handwash sink in the restroom area to remind food employees to wash their hands. Corrected.

Masa Hibachi & Sushi, 2733 Papermill Road, Wyomissing, Dec. 13: two violations. Open employee beverage containers were observed in the sushi preparation area. Corrected. Observed an accumulation of old food debris/dirt on the floor in the area of the rice storage, under the fryers/grill/stove area, and under the shelving in the dish washing area.

One Dollar Zone, 1167 A Berkshire Blvd., Wyomissing, Dec. 13: no violations.

Reading Liederkranz, 143 Spook Lane, Reading, Dec. 13: one violation. Thermometer for ensuring proper temperature of equipment is not available or readily accessible in the small bain marie at the cooking line.

Willoughby’s On Park, 305 N. Park Road, Wyomissing, Dec. 13: no violations.

Brewer’s Bar & Grill, 101 S. Third St., West Reading, Dec. 12: one violation. There is an accumulation of dirt on the floor under the dry storage shelving in the kitchen area.

Domino’s Pizza, 1139 Ben Franklin Highway, Douglassville, Dec. 12: two violations. Observed clean food equipment and/or utensils in clean dish rack area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). The floor / wall juncture in some kitchen areas is not coved and closed to 1/32 inch. Several broken coving tiles must be repaired.

Outback Steakhouse #3919, 1101 Woodland Road, Wyomissing, Dec. 12: four violations. The food facility does not have a current certificate for the certified food employee posted in public view. Food employee personal belongings observed stored on a shelf at the cooking line. Corrected. Observed multiple portion bags of cut vegetables stored at room temperature at the cooking line for an unknown period of time. Corrected by disposing of product. A container of cleaner was stored above and on the same shelf with food in the back food preparation area. Corrected.

Wyomissing Restaurant & Bakery, 1245 Penn Ave., Wyomissing, Dec. 12: five violations. Observed a buildup of dirt, grease, and other debris on the floor and walls at the cooking line. Hood surfaces have an accumulation of grease, dirt. Hood is scheduled to be cleaned soon. Thermometers for ensuring proper temperature of equipment are not available or readily accessible in the two bain marie units at the cooking line. Corrected. Working containers (spray bottles) in the dish washing area, used for storing chemicals, cleaners taken from bulk supplies, were not marked with the common name of the chemical. Corrected. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Call for service was made immediately. Facility will be manually sanitizing dishes until the machine is working properly.

Castaneda’s Mexican Restaurant, 225 E. Penn Ave., Robesonia, Dec. 9: no violations.

Phoebe Berks Health Care Center Inc., 1 Heidelberg Drive, Wernersville, Dec. 9: five violations. Mechanical warewashing equipment had a lime buildup observed around intake and exit curtain areas of machine. The handwash sink in the bistro area was blocked by carts and not accessible at all times for employee use. Corrected. Food prep table next to column in kitchen that has chipped drywall corners. Knife block covers on walls have dirt/dust residue build up and must be cleaned more frequently. Food facility person in charge does not have records to demonstrate routine inspection and service of backflow prevention devices and other water treatment devices. Filters for ice machines/soda fountain systems/warewashing machine are not dated with last date of service.

Stouch Tavern, 138 W. HighSt., Womelsdorf, Dec. 9: no violations.

Esterly’s Sandwich Shop, 479 Fleetwood Road PO Box 84, Bowers, Dec. 8: four violations. Observed deeply scored/discolored cutting boards not resurfaced or discarded as required. Flooring in the kitchen area has broken tiles sections that are not a smooth, easily cleanable surface. Shelf above kitchen counter prep area has flaked peeling paint. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Light cover in kitchen has a dirt buildup.

Giovannas Pizza, 5468 Perkiomen Ave., Reading, Dec. 8: two violations. An open employee’s beverage container was observed in the back food preparation area. Corrected. Working container (spray bottle) in front area, used for storing chemicals, cleaners taken from bulk supplies, was not marked with the common name of the chemical. Corrected.

Musso’s Restaurant, 4212 St. Lawrence Ave., Reading, Dec. 8: one violation. Food facility does not have available sanitizer test strips to determine appropriate sanitizer concentration at the 3-compartment sinks (quat tablets).

Tasker’s Beer Barn, 6520 Perkiomen Ave., Birdsboro, Dec. 8: no violations.

Turkey Hill Minit Market #053, 2450 Perkiomen Ave., Reading, Dec. 8: one violation. Food facility has an employee that has taken food safety training program however, the food safety program was not an ANSI/CFP accredited Certified Food Manager program.

Liv’n Green Supply, 1111 Route 100, Bechtelsville, Dec. 7: three violations. Carpet rug being used as a floor covering in kitchen area. Observed various seafood, reduced oxygen packaged by the food facility, not dated with a packaged date. Observed frozen reduced oxygen packaged fish without a label indicating that it is to be kept frozen until time of use. Food facility has an employee who held a Certified Food Manager certificate however, the certificate has expired and is no longer valid.
